This is called a "bacon explosion". It is about 3 pounds of bacon wrapped around 2 or 3 pounds of spicy italian sausage. We put it in a smoker for 3 or 4 hours before finishing it off on the grill. It was actually kind of dry without BBQ sauce, but it was out of this world with it.
If you ate some of that bomb, your carbon footprint just got bigger than sasquatch's, but it looks awesome. I'm impressed with the weaving technique. Did you use thick slice bacon? I would think regular slice might fall apart trying to do that.
ReplyDeleteI think it was just regular thickness bacon. The bacon itself seemed to be strong enough, more of the trouble was in carefully handling the whole thing so that it didn't unwrap. We also weren't 100% sure it was cooked because we didn't have a meat thermometer, but I don't feel sick yet, so it's probably OK.
